Tujuan penelitian yaitu mengetahui proses penanganan selama diatas kapal dan mengetahui mutu ikan tongkol secara organoleptik. Penelitian dilaksanakan dilaksanakan di Pangali-Ali Provinsi Sulawesi Barat. Metode penelitian yaitu deskriptif dan metode survey. Metode pengamatan penanganan menggunakan prinsip 3CIQ sampel uji sebanyak 15 ekor untuk setiap pengujian. Hasil penelitian menunjukkan penerapan 3CIQ tidak diterapkan pada kapal sampel, sedangkan uji organoleptik menunjukkan angka 8,2 (mata), 8,19 (insang). 8,13 (lendir), 8,04 (bau), dan 8,12 (daging). Kesimpulan penelitian meskipun penerapan 3CIQ tidak diterapkan kualitas ikan tongkol mencapai angka rata-rata 8.

The purpose of the study was to determine the handling process while on board and to determine the quality of tuna organoleptically. The research was conducted in Pangali-Ali, West Sulawesi Province.
